This Trusted BrewKnowledge mini-series uncovers the mysteries of how ingredients and the brewing process influence the taste of your beer, shaping your overall drinking experience.  We've teamed up with Advanced Cicerone, Jeremy Storton, and Peter Cronin, Quality Manager of Alesmith Brewing to share everything you need to know about beer flavor. 

 

How Does Flavor Impact Beer? | Part 1 

Flavor, encompassing taste, aroma, and mouthfeel, provides a profound sensory experience. While the traditional taste flavor map is flawed, flavor receptors extend beyond the taste buds to other parts of our mouth and body. Ongoing research suggests the existence of additional taste sensations.

Aroma plays a crucial role in distinguishing flavors like peanut butter and coconut. Mouthfeel, including viscosity, texture, carbonation, astringency, and alcohol warmth, adds another layer to the tasting experience. Chemesthesis, involving mucosal sensitivity to environmental chemicals, contributes to sensations like cooling and spiciness.

Flavor matters because it creates lasting memories, enriching our relationship with beer. Join us in exploring the world of flavor's essence and its impact on our journey through the world of beer!

 

How Does Flavor Impact Beer? | Part 2  

In this episode, hosted by advanced cicerone Jeremy Storton, we dive into the complexities of taste, aroma, and mouthfeel. Partnering with AleSmith Brewing's Quality Manager, Peter Cronin, we unravel the science of our senses. Our tastebuds are distributed throughout our tongues, challenging the traditional flavor map. While we perceive sweet, salty, sour, bitter, and Umami, aroma is crucial for intricate distinctions like coconut versus chocolate.

Retronasal aroma, enhanced by carbonation, enriches our experience. Foam releases essential oils, particularly terpenes, contributing to diverse flavors. In order to appreciate all aromas, promptly immerse your nose in the beer after pouring. 

 

How Does Flavor Impact Beer? | Part 3 

Jeremy and Peter explore the flavorful dimensions of beer ingredients in this episode. Water, a key component, carries minerality and regional character, significantly impacting taste. Malt, ranging from pale to dark, contributes a spectrum of flavors, from bread-like to roasted, depending on the kilning process. Hops, likened to spices, offer diverse profiles: pine, grapefruit, tropical fruits, and more.

The episode highlights how specific varieties of hops produce unique tastes. The exploration underscores the exciting potential for discovering novel flavors in brewing.

 

How Does Flavor Impact Beer? | Part 4 

This episode centers around the role of yeast and other flavor-enhancing ingredients in beer production. Yeast contributes a variety of flavors, including fruity esters and phenols, affected by fermentation conditions. Lager yeast produces cleaner flavors, while ale yeast introduces more pronounced fruity notes.

The discussion highlights the significance of yeast behavior in creating diverse beer profiles. The episode also explores the impact of adjunct grains, fruits, vegetables, and barrel aging on beer flavor. Barrel aging adds complex flavors, such as coconut and vanilla, derived from the wood. With countless ingredients available, each beer's unique composition leads to a vast array of flavors and experiences in the world of brewing.

In previous episodes, we explored beer's ingredient-based flavors. Now, let's explore how the brewing process impacts flavor.

The brewing process, including factors like mash temperature, fermentation temperature, and dry hopping, can significantly influence the final taste and aroma of the beer. Decoction mashing can enhance malt flavor and texture, as well as hot bursting for maximizing hop aroma and flavor while minimizing bitterness. Jeremy and Peter emphasize the intricate relationship between brewing techniques and the resulting beer profile, highlighting the importance of process in shaping a diverse range of flavors and experiences.

 

How Does Flavor Impact Beer? | Part 6 

Why does beer flavor matter so much? Flavor and aroma are deeply connected to memory and experiences, shaping our perceptions of joy and connection to places and people. The uniqueness of flavors in beer adds to the overall experience, making it enjoyable, memorable, and impactful.

Trying new beers and discovering your next favorite adds to the richness of these experiences. In the end, "life's too short for bad beer", as Peter said, and seeking out flavorful brews allows us to savor and create meaningful moments.

 

How Does Flavor Impact Beer? | Part 7 

In this episode, Jeremy and Peter explore the challenges and experiences of brewing non-alcoholic beer (NA beer). Peter shares his journey of creating an NA IPA, which involved adjusting processes and ingredients to produce a satisfying NA beer. He describes the humbling experience of having to relearn aspects of brewing due to the unique nature of NA beer production.

Even the smallest changes in the brewing process can lead to significant differences in flavor profiles. The collaborative nature of the craft beer industry and the challenges of brewing NA beer helped create a proprietary product that AleSmith can be proud of.
